Growing vegetables for a local market rather than for a transcontinental journey, allows us to choose varieties that have not been strictly bred for shipping and shelf life qualities. Because we provide food for a local market we can let our produce ripen on the vine instead of in a box on a truck or in a warehouse while en-route.
